Ingredients:

  • Dressing:
  • 3 tablespoon olive oil
  • 3 tablespoon balsamic vinegar
  • 2 tablespoon chopped fresh bazil
  • 1 clove of garlic
  • Salad:
  • 1 – 15 oz can red kidney beans (drained and rinsed )
  • 1 cup sliced celery
  • 1/4 cup chopped onion
  • 1 medium cucumber, halved lengthwise, seeded, sliced

Directions:

Combine all dressing ingredients, set aside. Combine all salad Ingredients (use vegan versions): mix well, pour dressing over. Can be made up to 8 hours ahead. Tastes better if given time to “marinate”(1/2 hour would be good).
