Ingredients:

  • 1 large can black beans
  • 1 small can chick peas (cece beans)
  • 1 small can red kidney beans
  • 3 carrots
  • 2 potatoes
  • 1 large onion
  • 3 cloves garlic
  • 1 large green pepper
  • cumin, curry powder, Mrs. Dash, salt, pepper, bay leaf
  • oil
  • 1 small can diced tomatoes
  • 1 cube vegetable boullion

Directions:

Cook the onion, garlic, and spices in the oil in a large saucepan. Add the tomatoes and the bouillion cube. Cut the carrot, pepper, and potato into 1/2″ pieces. Add the beans to the saucepan along with 1 small can of water. Add the veggies. Simmer the soup for about half an hour or until the potatoes and carrots are soft. I like it with whole wheat pita but you can do whatever you like. Enjoy!
