• 1 lb bag black beans, rinsed, soaked and cooked, or canned equivalent
  • 1 lb bag frozen yellow sweet corn
  • 2 cans Hunts special recipe diced seasoned tomatoes for chili
  • 1 large yellow onion, coarsely chopped
  • optional
  • 2 tablespoons olive oil
  • corn chips, crushed
  • finely chopped green onion
  • vegan “sour cream”


Combine first 4 ingredients in a stock pot, with one tomato can full of water, poured through both cans, to get out all the lingering traces of sauce. Add the optional olive oil, if desired, and simmer, covered for 25-30 minutes.

Serve garnished with corn chips, vegan “sour cream”, and green onion, or just plain is good too. I served this at my daughters birthday party, with all of our meateater relatives, and they all loved it, and Grandma left with the recipe :-) I made it without the oil and sour cream, just chips and onions, and it was soooo very good :-)
