- 4 ounces (oz) vegie suet
- 8 oz self raising flour (white or brown)
- 2/3 oz cold water
- 1 pound fresh leeks
Mix suet and flour add enough water to make dough. Clean and roughly chop the Leeks. Prepare a dish about 4 inches deep suitable for steaming, lightly grease inside with oil or margarine.place large pan of water to boil upon stove. Cut pastry into 2/3rd and then 1/3rd. Roll out 2/3rd to line your dish, put leeks into lined dish then roll out 1/3rd to make a lid for the pie. Cover top of pie dish with sheet of greaseproof paper (rubber band to hold this on edge of dish a good idea) if you have a steamer then place dish into this then on to pan of boiling water if no steamer thengently lower dish into pan (WATER SHOULD ONLY REACH 2/3RD UP HIGHT OF YOUR DISH AS WATER SHOULD NOT CONTACT DIRECTLY WITH PIE. BUT WATER MUST BE REFILLED TO MARK DURING COOKING TIME NEVER LET PAN BOIL DRY) boil the pie for one and a half hours.
LEEKS ARE MEMBERS OF THE SAME FAMILY AS ONIONS. THIS PIE/PUDDING IS VERY GOOD SERVED WITH PARSLEY. IT IS A VERY FILLING DISH AND IS OFTEN A WINTER/SPRING DISH, ONIONS CAN BE USED INSTEAD OF LEEKS. ALSO THE PASTRY IS GOOD IF A SMALL AMOUNT OF FRESH OR DRIED HERBS ARE ADDED TO THE DOUGH MIX. I HOPE YOU ENJOY THIS RECIPE IT IS WELL WORTH THE TIME AND IS CHEAP TO MAKE.
