Ingredients:

  • 2 medium cucumbers
  • 1 small red onion
  • 2 teaspoons salt
  • 3 tablespoons vinegar
  • 7-10 chopped green olives
  • 3 tablespoons water
  • 1/2 teaspoons vegan sugar
  • 1/4 teaspoon paprika
  • 1/4 teaspoon black pepper

Directions:

Pare and cut cucumbers and onion into thinly sliced pieces. Seperate onion slices into rings. Add Salt. Let stand for 30 minutes.

Squeeze out any liquid, and place cucumber in a bowl. Combine remaining ingredients.

Pour over cucumbers. Refridgerate until served.
