• 1 average size onion
  • green peppers (or any kind of pepper you wish)
  • 4 cups vegetable stock
  • 2 regular sized cans of diced tomatoes
  • 1-2 cans black beans (with liquid)
  • any kind of frozen veggies you like
  • chili powder
  • cumin
  • 1 can tomato sauce
  • 2 cups dry rice

Saute chopped onion and peppers in olive oil. Add vegetable stock, tomato sauce, diced tomatoes, black beans and frozen veggies. (I like using mixes, like veggies for stew, etc.). Season with chili powder and cumin to taste.

Simmer for 30-45 minutes.

While soup is simmering, prepare rice. When rice is finished, add to soup and stir well.
