• 6 oz oatmeal (porridge oats)
  • 3 1/2oz brown vegan sugar
  • 1 1/2tsp ground cinnamon
  • 10 oz sultanas and/or raisins
  • 300 ml unsweetened apple juice
  • 6 oz wholewheat flour
  • 2 teaspoon baking powder

Grease and line a 2lb loaf tin. Put the oatmeal, vegan sugar, cinnamon and sultanas/raisins in a large bowl and pour over the apple juice. Leave the mixture to soak for half an hour.

Sift in the flour and baking powder and fold into the mixture. Place the mixture into the prepared tin and bake at 350F for about an hour or until it is firm. Each serving contains 360 calories and 2.8 grams of fat.
