- vegan soymilk
- soy butter
- salt and pepper to taste
Wash and peal then cut potatoes into large chunks. Boil in water until soft (but not mushy). Drain water and add soy milk (1/2 cup or so), mash well, until all the lumps are out. Salt and pepper to taste (garlic is good too). Add a touch of soy butter for flavor (optional)
Shape potatoes into patties (four inches across or so), and place in SLIGHTLY “buttered” pan.
Warm until golden brown, and flip very carefully.
