  • sprinkle generously with dried oregano

Scrub some potatoes and cut them into wedges lengthwise. Halve them crosswise if they are an unwieldy size. Arrange the wedges on a baking sheet, skin side down. Spritz lightly with Pam (olive oil flavor is nice) and sprinkle generously with dried oregano. The Pam is optional, and is only used to help the oregano cling. I’ve been meaning to try brushing some vinegar on the cut sides before adding oregano.

Put the potatoes under the broiler and remove when golden. Sprinkle with malt vinegar, salt to taste, and serve immediately.
