- 2 tablespoon coconut oil-organic
- 1 onion
- 5 redskin potatoes medium size
- 4 cups corn off cobb
- 3 celery stalks
- 6 cups water
- 1 teaspoon thyme
- 2 to 4 bay leaves
- 5 cloves of garlic
- 1 tablespoon sea salt
- 1/2 teaspoon black pepper grounds
Saute in oil onion, thyme, bay,and garlic until onion is translucent.
Add Potatoes(cut)and 2 cups of corn plus water and salt. Simmer 20 minutes (aprox).
Remove bay leaves(discard) and 1/4 of the soup. Blend and return to the pot.
Add remaining corn, celery, pepper(option:add leeks now). Adjust Seasonings.
Simmer 15-20 minutes until veggies are tender
