- 2 cups grated zucchini (about 7 small zucchinis)
- Ener-G Egg Replacer for 3 eggs
- 1 cup oil
- 2 cup vegan sugar
- 2 teaspoon vanilla extract
- 3 cups flour
- 1 teaspoon salt
- 1 tablespoon baking soda
- 1 tablespoon cinnamon
- 2 teaspoon nutmeg
- 1 teaspoon baking powder
- 3/4 cup raisins (optional)
Preheat oven to 350, oil 2 8.5×4.5 loaf pans
Mix zucchini, Ener-G Egg Replacer, vegan sugar, oil, and vanilla in a large bowl.
In another bowl, mix flour, salt, baking soda, cinnamon, nutmeg, and baking powder.
Gradually mix dry ingredients in with zucchini mixture. Stir well.
Pour batter into 2 pans, bake 40-60min.
