Ingredients:

  • 2 med. zucchini
  • 3 med. onions
  • 3-4 med. potatoes
  • 2 green tomatoes
  • 2 red tomatoes
  • garlic salt to taste
  • pepper to taste
  • 1/4 cup canola oil
  • steamed rice

Directions:

Slice all vegetables. Combine in large skillet heated with oil. Fry on medium heat until tender. Add garlic salt and pepper to taste. Serve over rice.
